For something sweet this Christmas, why not try this tempting pomegranate and maple infused cocktail. Perfect to try on a girls-night in and would even make a great way to see in the new year.

How to make the Pomegranate and Maple Fizz:

Serves 2

1 pomegranate

2 tbsp maple syrup

500ml indian tonic water

2 shots of vodka

Remove the arils from the pomegranate. If you place them in a bowl of water, the fleshy bits will rise to the top and you can scoop them out.

Place the arils in a blender and blitz until it turns into a juice.

Pour into a fine sieve over a mug and discard the seedy pulp. It will produce around a 1/4 cup of pomegranate juice.

Add the maple syrup and vodka and stir. Then divide between 2 glasses and top with the tonic.
